I have been so excited to pass along this recipe. A friend gave to me a couple years ago. It is one of our favorites (and not too expensive!). It is a little over my $1 per person, but we always have leftovers (it is good reheated).
1 lb ground beef ($1.98)
8 oz spaghetti noodles ($.40)
1 can spaghetti sauce ($.90)
8 oz sour cream ($.50)
4 oz cottage cheese ($.50)
4 oz cream cheese ($.50)
2 c mozzarella (to taste, we don't use that much) ($1.50 if you use the whole 2 cups)
Brown the ground beef and drain. Return to pan, add sauce and warm. Cook noodles according to package. Place noodles on the bottom of a 9x13 pan. Add meat/sauce mixture on top. Mix sour cream, cream cheese, and cottage cheese together. Pour over the top of the meat sauce. Bake at 350 degrees for 20 minutes. Add mozzarella to the top. Bake until melted. Then you will see where it got its name!
